Cupcake Heaven...

So tonight we are having a going away party for Bethy's Drew because he heads off to spring training in Arizona next week (his first full season of professional baseball! Woot woot)! We are SO excited for him and can't wait to see all the awesome things God has in store for him and his baseball career! 

A couple weeks ago we ran across a really cute blog who had this recipe for some AMAZING cupcakes. We, in all our cupcake loving glory, decided to try them out and lets just say....HELLO heaven!...and hello treadmill for the next 3 weeks! Haha! 

We decided that since they were such a big hit (and Drew loved), we'd make them again tonight for the party. Say hello to the DELICIOUS Chocolately Chocolate Snickers Cupcakes...

 Ingredients:

Cupcakes
1 box Devils Food Cake Mix
1 box Jello Chocolate Fudge Instant Pudding Mix
4 Eggs
1/2 cup vegetable oil
1 cup milk
1 cup sour cream

Chocolate Mousse Filling
2 cups heavy whipping cream
2 cups milk chocolate chips
...You could half this and still have plenty to fill 24 cupcakes!

Chocolate Buttercream Icing
1 Stick softened butter 
2 1/2 to 3 cups confectioners sugar
1/4 cup cocoa powder 
1/2 tsp. vanilla
About 2 tbsp milk
...We double this recipe for 24 cupcakes...

Topping
Chopped Snickers Minis

Preheat oven to 350 degrees. Line 24 cupcake tins with liners. Combine all cupcake ingredients and beat well...about 2 minutes.

 Add batter evenly into each of the 24 cupcake tins. Bake for 20-25 minutes or until a toothpick comes out clean from the center. Remove the cupcakes from the tins and let them cool.

 For the chocolate mousse, melt the chocolate chips in the microwave, stirring ever 30 seconds or so. Set aside to cool. While chocolate is cooling, whip the heavy whipping cream with a mixer until stiff peaks form. Fold melted chocolate into into whipped cream until well combined. Transfer mousse into a piping bag and when cupcakes have cooled completely, press the tip of the piping bag into the center of the cupcakes, squeezing as you pull the tip out. Fill all the cupcakes :)


 For the chocolate buttercream icing, beat the butter, powdered sugar cocoa and vanilla until well combined. Add a tablespoon of milk while mixing until a nice icing consistency is reached. Place icing in a piping bag to pipe icing onto the cupcakes as we did, or just spread on :)  
 Chop up your Mini Snickers with a knife on a cutting board and sprinkle on top of the frosted cupcakes...

...and VOILA...
